🍋Vegan Lemoncurd🍋



Who doesnt love a good lemon curd? Such a british classic! From time to time we do batches for vegan markets and christmas...and obviously we use it in the shop. Its delish! This recipe is quick and easy and tastes great as it comes with real lemon zest and fresh lemon juice.🍋🌱


Ingredients: ————— 2 fresh lemons 150g sugar (not brown) 75g vegan cream (alpro single cream) 75g vegan butter (we use Alsan or Naturli) 3 slightly heaped teaspoons starch Vanilla Essence (optional) —————— Method: —————— 1. Zest one of the lemons and put the lemon zest aside. 2. Squeeze both lemons, you will need 110ml of the fresh lemon juice. 3. Mix the lemon juice, sugar, vanilla essence and lemon zest in a pot and put it to boil. 4. When boiling add the Margarine and the Cream. 5. Put the starch in a cup, take 4-5 tablespoons of the hot lemon mix out of the pot and mix it with the starch in the cup. When smooth and without any lumps pour it back in the pot and let it boil a couple of minutes until it starts to thicken. 6. Now fill it straight in a jar and let it cool. 7. Store it the fridge and use as spread, filling or topping🍋👌🏻
